New Recipe: Oreo Cheesecakes

Often times when people find out i am a dietitian, their first response is, "Oh you must eat really healthy then!". Im here to tell you, yes i do try to eat healthy most of the time, but i also like to enjoy some "bad" stuff on occasion. Or multiple occasions ;)

Mini Oreo Cheesecakes- from Kraft
  • 1 package oreos
  • 2 8oz blocks 1/3 reduced fat cream cheese
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 tsp vanilla extract (I love vanilla and used about 1 tsp instead)


Preheat oven to 350. Mix cream cheese, sugar and vanilla in mixer until fully blended.



Next add eggs and mix until blended. Place muffin liners in muffin tin (i got 15 out of the recipe, the original called for 12). Place an oreo in the bottom of each liner.



Spoon cream cheese mixture into each cup (about 2/3 full).




Bake for 20 minutes. Remove and let cool. Then refrigerate for 3 hours.



Garnish with fruit or topping of your choice. I chose to use some oreos instead of fruit.

PS- These would be great to freeze for another occasion. I know ill be sending half the batch to hubby's work, keep a couple out for tonight, and freeze the rest!

Creamy Italian Chicken Casserole

Long time no post! Just wanted to stop in and share a new recipe with you.

After getting home at 6pm, with a hungry husband looking me in the eye, i knew i needed to throw something together pretty quick! I had some leftover baked chicken breasts and a leftover chicken fajita breast. I also had a craving for Italian. So here is what i came up with.

Creamy Italian Chicken Casserole- loosely adapted from Dashing Dish


Ingredients:
  • 4 large chicken breasts- I used about 9 smaller chicken tenders, just enough to layer the bottom of the dish
  • 2 cups marinara sauce- I used my favorite family recipe
  • 1 cup frozen spinach
  • 1 brick 1/3 reduced fat cream cheese
  • 1 cup shredded mozzarella cheese
Optional: Pasta or salad to serve with

Preheat oven to 375 degrees. Place chicken on a baking sheet seasoned with salt and pepper. Bake for 30 minutes or until fully cooked. Remove from oven and set aside.  Coat a 13 x 9 inch baking pan with cooking spray. Spread a thin layer of marinara sauce over the bottom of the pan. Next layer the bottom of the pan with the chicken. In a separate bowl, mix the cream cheese and spinach together until spinach is fully incorporated and the cream cheese is smooth. Drop/spread cream cheese and spinach mixture on top of the chicken breasts. Top with shredded mozzarella. Bake for 35 minutes or until sides are bubbling. Serve with pasta or salad. Enjoy!

PS- I know the dish only looks like a 9 x 9 but its only half of what was left....im still no good at this taking pictures thing!
